feta pie

Tonight's yummy recipe is a meldge of my mom's spinach rolls recipe and the feta zuchinni pie recipe featured in How to Be a Domestic Goddess: Baking and the Art of Comfort Cooking.



Spinach Feta Pie

Saute gently
2 T olive oil
1 T cumin seeds
1 large onion, diced
1 carrot, chopped small

Turn way down and let the onions sweeten.

Steam
1 head of spinach (or thaw one box of frozen), drain and combine with onion mixture.

Add
2 beaten eggs
2 cups feta
1 C pine nuts
1 C of cooked rice (optional)

Butter your springform pan. Line springform pan with filo dough or puff pastry.

Pour in cheese, egg, vegie mixture

Bake at 400 for 30 minutes or until everything looks done.






This paired very nicely with the Cumin Black-eyed Peas which I will post about on another day.
